Lisbon
A city of light, tile and grilled fish. The volume opens when forty Lisbon founders are accepted and place their chip.
Every Cazuela city opens the same way. Forty founders are accepted, each places a chip on a place they believe in. The volume goes live the day the fortieth chip lands. After that, the founder door closes for that city — for good — and the volume opens to monthly and annual members.
Free seat. Free chip. By application. We read every application, look at the place you’d stake on, and accept the founders who actually know the city. Accepted founders get a year of full membership, a €100 chip on the spot, and the metal card by post. The multiplier locks at staking; the card stays yours forever. Year 2 onward: opt in to annual at €140, or step away — your founder badge stays either way.
One founder seat per person, ever. Pick the city you know best. Want to stake in another city later? Become a member and buy a chip at €100 — same as everyone.
Open cities are accepting founder chips. Live cities have already passed fifty — the volume is open to all members there. Future cities are announced; sign the waitlist if you’re from one.

Markets, granite, the cooks who never wrote a menu. Founder door opens later this year.
Tavernas in the back streets, ouzo at four, the rooms only locals know.
The cooks who never wrote a menu. Trattorias in the alleys, pizza by hand, sfogliatella before the sun.
Pintxo bars only locals fill. Cider houses up the hill. The kitchens that hold three Michelins quietly.
Rooftop suppers, mezze at four hours, the bakeries the city queues for at dawn.
Stone fincas in the hills, ports the tourists miss, the markets where chefs do their own shopping.
Riad kitchens, tagines that take a day, the souk stalls only the regulars find twice.
Riverside cellars, francesinha lunches, the small grills that close before the postcards arrive.
Ragù as religion, the osterie under porticoes, the pastificios that still sell yesterday’s tortellini at dawn.
Khlong-side noodle stalls, the night markets locals queue at, the kitchens hidden one floor up.
Kappo counters with eight seats, machiya kitchens behind unmarked doors, the tea rooms only members find.
The fondas where doctors lunch, the mercado cooks who never wrote it down, the pulquerías that close at five.
Bosphorus meyhanes, the bakers who start at three, the kebab masters who only stop when the meat runs out.
A coast that is loud on the surface and quiet underneath. The places worth knowing are rarely the ones with the best signage.
