Lisbon
A city of light, tile and grilled fish. The volume opens when the first ten Lisbon members claim their founding Cazuela.
Each Cazuela city opens with the same ritual. 30 founding Gastronomes pay €175/yr — locked for life. They each plant 2 chips, seeding 60 founding Cazuelas before the doors open to public readers.
The seats fill once. They never reopen. After the founding 30 are filled in your city, the rate becomes €350/yr for everyone else.
Only 30 founding seats per city. Annual only. Includes 2 chips on signup; up to 4 active. €100 for each extra or replacement chip.
First 200 per city. Year 1 only — Year 2 onwards everyone pays standard €70/yr.
Founders aren’t paying less because they get less. They’re paying with risk — committing before the city has a hundred Cazuelas. The discount is the platform’s thank-you.
Open cities are still accepting founding Gastronomes. Live cities have already filled their 30 founding seats — read them, or wait for a seat to free up via the waitlist (cap grows with reader base).

Stone fincas in the hills, ports the tourists miss, the markets where chefs do their own shopping.
Riad kitchens, tagines that take a day, the souk stalls only the regulars find twice.
Riverside cellars, francesinha lunches, the small grills that close before the postcards arrive.
Ragù as religion, the osterie under porticoes, the pastificios that still sell yesterday’s tortellini at dawn.

A coast that is loud on the surface and quiet underneath. The places worth knowing are rarely the ones with the best signage.
Each city: 80 active Cazuelas at base. Cap grows by +1 per 40 new Aficionados above 1,000. Bad picks die at the visit floor; slots free up; the waitlist moves.
